Assignment Title: Case Study Celiac Disease

What I learned: In this assignment I learned how to examine a case study about a client with Celiac Disease.  I did a full assessment including a PES statement, calculated nutrient needs, took a 24 hour recall, and identified important labs to monitor. 

Reflection to assignment: By doing this case study I learned a lot about the process that a dietitian would go through for a client.  Before doing this assignment I knew what Celiac Disease was but not to the extent that I knew after the case study.  This assignment gave me the practical use I will need during my dietetic internship.

Relevance to the profession: Case studies are a great way to get job experience of being a clinical dietitian.  Celiac Disease is also a disease that most clients need nutrition advice to start the diet changes associated with removing gluten from the diet.
